Quinoa Tabbouleh

About the Recipe


  • 1 cup quinoa

  • 1/2 lemon

  • 1 garlic clove, minced

  • 1 dash ground pepper

  • 1 cucumber, chopped

  • 1 box cherry tomatoes 1/2 pint quartered

  • 1 pinch parsley flakes

  • 1 scallion, chopped

  • dash salt


  1. Rinse one cup quona in a fine sieve, drain, and transfer to a medium pot.

  2. Add two cups of water and a pinch of salt. Bring to a boil and simmer until the water is absorbed and quinoa is fluffy (15-20 minutes).

  3. Meanwhile, mix together all the ingredients in a bowl.

  4. Let quinoa cool. Then add to the mixture, toss, and coat with lemon juice, salt, and pepper.
