Ingredients
1 cup quinoa
1/2 lemon
1 garlic clove, minced
1 dash ground pepper
1 cucumber, chopped
1 box cherry tomatoes 1/2 pint quartered
1 pinch parsley flakes
1 scallion, chopped
dash salt
Preparation
Rinse one cup quona in a fine sieve, drain, and transfer to a medium pot.
Add two cups of water and a pinch of salt. Bring to a boil and simmer until the water is absorbed and quinoa is fluffy (15-20 minutes).
Meanwhile, mix together all the ingredients in a bowl.
Let quinoa cool. Then add to the mixture, toss, and coat with lemon juice, salt, and pepper.
