Quinoa Salad with Lentils

About the Recipe


  • 1 cup quinoa

  • 1 cup lentils

  • 1/2 tsp. fine sea salt

  • 1 tbsp. cumin

  • 1 tbsp. coriander

  • 1 large carrot

  • dash black ground pepper

  • handful of spinach


Step 1

Rinse one cup quinoa in a fine sieve, drain, and transfer to a medium pot

Step 2

Add 2 cups of water with a pinch of salt. Bring to a boil and simmer until the water is absorbed and quinoa is fluffy (15-20 minutes)

Step 3

Rinse one cup of lentis and transfer into a medium pot.

Step 4

Add 2 cups of water, 1 tbsp. of cumin, 1 tbsp. corrinder, 1 large carrot (chopped), 1 dash of black ground pepper.

Step 5

Bring to a boil and simmer for 20-30 minutes. Add water as needed to make sure the lentils are just barely covered.

Step 6

Serve quinoa over a bed of spinach and top with lentils.
