Ingredients
1 cup raw almonds, soaked
2 ribs celery, diced
3/4 cup minced fresh parsley
1/2 cup dried cranberries
1/4 cup red onion, diced
2 tbsp. diced orange bell pepper
2 tbsp. dried or fresh dill
2 tsp. apple cider vinegar
1 tsp. kelp or dulse flakes
1/2 tsp. sea salt
6 Roma tomatoes
Preparation
Blend all ingredients except tomatoes until incorporated. You can make this paté smooth or keep it a little thicker.
Transfer mixture to a bowl and set aside.
Wash and dry tomatoes.
Take sharp paring knife and cut a circle around stem.
Remove insides of tomato to hollow. Fill tomatoes with almond mixture.
