Almond-Stuffed Tomatoes

About the Recipe

Ingredients

  • 1 cup raw almonds, soaked

  • 2 ribs celery, diced

  • 3/4 cup minced fresh parsley

  • 1/2 cup dried cranberries

  • 1/4 cup red onion, diced

  • 2 tbsp. diced orange bell pepper

  • 2 tbsp. dried or fresh dill

  • 2 tsp. apple cider vinegar

  • 1 tsp. kelp or dulse flakes

  • 1/2 tsp. sea salt

  • 6 Roma tomatoes

Preparation

  1. Blend all ingredients except tomatoes until incorporated. You can make this paté smooth or keep it a little thicker.

  2. Transfer mixture to a bowl and set aside.

  3. Wash and dry tomatoes.

  4. Take sharp paring knife and cut a circle around stem.

  5. Remove insides of tomato to hollow. Fill tomatoes with almond mixture.
