Ingredients
2 Tbs. extra virgin olive oil
1 clove of garlic, minced
1/2 cup cherry tomatoes, halves
2 bunches of kale, chopped (with stems removed), divided
2 Tbs. pine nuts
1/2 teaspoon red pepper flakes
Sea salt and ground black pepper, to taste
Preparation
In a large pan on low heat, heat the oil. Add the garlic and cherry tomatoes and stir for 2 minutes.
Add 1 bunch kale leaves and cook for 1-2 minutes.
Add the second bunch of kale and continue to saute for about 3 minutes or longer.
Toss in the pine nuts, red-pepper flakes, salt and pepper and stir.
Continue cooking until the kale is tender but still bright green!
