Komforting Kale Salad

About the Recipe


  • 2 Tbs. extra virgin olive oil

  • 1 clove of garlic, minced

  • 1/2 cup cherry tomatoes, halves

  • 2 bunches of kale, chopped (with stems removed), divided

  • 2 Tbs. pine nuts

  • 1/2 teaspoon red pepper flakes

  • Sea salt and ground black pepper, to taste


  1. In a large pan on low heat, heat the oil. Add the garlic and cherry tomatoes and stir for 2 minutes.

  2. Add 1 bunch kale leaves and cook for 1-2 minutes.

  3. Add the second bunch of kale and continue to saute for about 3 minutes or longer.

  4. Toss in the pine nuts, red-pepper flakes, salt and pepper and stir.

  5. Continue cooking until the kale is tender but still bright green!
