Cinnamon Quinoa Breakfast Bowl

  1. Rinse and drain quinoa

  2. Place quinoa in a small saucepan, add the almond milk, cinnamon, vanilla and salt. Bring to a high simmer, cover and reduce heat to a low simmer for 15 minutes. (Don't walk away. It starts bubbling pretty quickly, turn heat off, stir and resume.)

  3. After 15 minutes, remove pan from heat and let the quinoa sit for 5 more minutes or until the almond milk is absorbed and the quinoa is cooked. Taste and add additional spices to your liking. 

  4. Scoop the quionoa into two bowls and top with toasted almonds, toasted coconut, and fruit.
