1 medium tomato, finely chopped
1/2 Haas avocado, finely chopped
1/2 small onion, diced
1 garlic clove, minced
2 tbsp. lemon juice
2 tsp. extra virgin olive oil
1 tsp. basalmic vinegar
1 fresh basil leaf, chopped (or pinch of dried basil)
sea salt, to taste
ground black pepper, to taste
2 vegan and gluten-free slices of toast
In a mixing bowl, toss the tomato. avocado, onion, garlic, lemon juice, oil, vinegar, basil, sale and pepper.
Toast the bread, top with tomatoe's and serve!
