Ingredients

  • 3 egg whites

  • 1 cup spinach

  • ¼ cup diced tomatoes

  • ¼ cup sliced mushrooms

  • 1 tsp original Mrs. Dash

  • ¼ cup of water

Preparation

1. Spray a skillet with non-stick cooking spray.

2. Sauté spinach and mushrooms with ¼ cup

of water on medium heat until the spinach has

wilted, the mushrooms are lightly browned and

all water has evaporated.

3. Add tomatoes, then pour egg whites over

veggies in the skillet and mix together.

4. Cook for about three minutes or until eggs

have solidified.
