1 scoop Vanilla Protein Powder
1 chia or flax egg
3 Tbsp. oat flour
1-2 Tbsp. unsweetened almond milk
1/2 tsp. vanilla extract
2 tsp. maple syrup
Coconut oil spray
Combine all ingredients in a bowl and whisk until smooth.
Spray pan with coconut oil spray and heat over medium-low before pouring in batter.
Cook 3-4 minutes on each side.
The key to the perfect pancake is to cook low and slow!
Serve with 1 Tbsp. crush almonds and 1 Tbsp. unsweetened coconut flakes and blueberries.
