About the Recipe

Here's a snappy, fresh side dish or a light supper: a lemony green salad, rich with tang and crunch. The dressing is nothing more than lemon juice, olive oil, garlic and salt. Its simplicity makes it perfect.


  • 1 bunch kale, stemmed and chopped

  • 1 carrot, chopped or grated

  • 2 tablespoons raisins

  • 1 orange

  • 1 tablespoon lime juice

  • 1 tablespoon olive oil

  • 1 teaspoon honey

  • ¼ teaspoon salt

  • 1 garlic clove, finely chopped

  • Cayenne pepper

  • 60 almonds


  1. In a bowl, combine kale, carrot, and raisins.

  2. In another bowl, whisk together the juice of 1 orange, lime juice, olive oil, honey, salt, garlic, and cayenne.

  3. Toss salad with dressing and divide between 2 plates. Garnish each with 30 almonds.
