About the Recipe

Ingredients

Salad Ingredients:

  • 1 head of iceberg lettuce or green cabbage, shredded (chop as finely as possible)

  • 1/2 cup cucumber, finely chopped

  • 1/4 cup green onion or scallions

  • Spice it up with a jalepeno


Dressing:

  • 1 cup basil leaves

  • 1 cup spinach leaves

  • 2 cloves garlic

  • 1 small shallot

  • juice 2 lemons

  • 1/4 cup olive oil

  • 1/4 cup walnuts, cashews, or both

  • 1 tsp. salt

  • 2 tsp. rice vinegar

  • a sprinkle of chives

Preparation

Step 1


Mix the shredded lettuce, diced cucumber and chopped scallions into a bowl.



Step 2


Add the ingredients into a the processor or blender and mix until smooth. Add water if preferred smoother.



Step 3


Mix well until the salad base is coated in the dressing.
