Pistachio Cucumber Canapes

About the Recipe


  • 1 cup pistachios

    1/2 onion

  • minced

    1/4 cup mint

  • packed

    1/2 lime

  • juiced

    1 tbsp. olive oil

  • 1 tsp. apple cider vinegar

  • 1 tsp sea salt

    1 Roma tomato

  • sliced

    1/2 cup basil leaves

  • minced

    2 cucumbers


  1. Combine all ingredients in a food processor and mix until chunky.

  2. Using a vegetable peeler, create wide ribbons of cucumber by slicing lengthwise until seeds are reached, then flip and repeat on other sides.

  3. Place tomato slices and basil on top of cucumber strips with 1 tsp. of pistachio mixture.

  4. Starting at base, roll into a small canapé, and garnish with black sesame seeds.
