About the Recipe
The classic stir-fry recipe is the perfect way to make a healthy, diabetes-friendly and low-carb meal from whatever you might have in the fridge or pantry.
1/4 cup mushrooms, onions (diced), carrots (finely chopped), broccoli (chopped) (all separate)
4 oz extra firm tofu
1/2 cubes spinach
2 tsp. sesame oil
1/2 orange, juiced
Add the oil to a skillet over medium heat
Add in Tofu cubes and cook until slightly brown
Add the veggies and turn heat to high, add 1 Tbs. water after about 1 minute to allow the veggies to cook at high heat without burning.
Lightly toss veggies and tofu in pan and cook for about 3 minutes. Add more water if needed to keep veggies from getting brown.
During the last 30 seconds pour juice from orange contents in pan for a nice orange flavor (optional).
