Vegetable-Chicken Stir Fry

About the Recipe

The classic stir-fry recipe is the perfect way to make a healthy, diabetes-friendly and low-carb meal from whatever you might have in the fridge or pantry.


  • 1/4 cup mushrooms, onions (diced), carrots (finely chopped), broccoli (chopped) (all separate) 

  • 4 oz extra firm tofu

  • 1/2 cubes spinach

  • 2 tsp. sesame oil

  • 1/2 orange, juiced


  1.  Add the oil to a skillet over medium heat

  2.  Add in Tofu cubes and cook until slightly brown

  3.  Add the veggies and turn heat to high, add 1 Tbs. water after about 1 minute to allow the veggies to cook at high heat without burning.

  4.  Lightly toss veggies and tofu in pan and cook for about 3 minutes. Add more water if needed to keep veggies from getting brown. 

  5.  During the last 30 seconds pour juice from orange contents in pan for a nice orange flavor (optional).
