Here's a snappy, fresh side dish or a light supper: a lemony green salad, rich with tang and crunch. The dressing is nothing more than lemon juice, olive oil, garlic and salt. Its simplicity makes it perfect.
1 bunch kale, stemmed and chopped
1 carrot, chopped or grated
2 tablespoons raisins
1 tablespoon lime juice
1 tablespoon olive oil
1 teaspoon honey
¼ teaspoon salt
1 garlic clove, finely chopped
In a bowl, combine kale, carrot, and raisins.
In another bowl, whisk together the juice of 1 orange, lime juice, olive oil, honey, salt, garlic, and cayenne.
Toss salad with dressing and divide between 2 plates. Garnish each with 30 almonds.
