A simple, hearty, and wholesome kale salad for weeknight dinners or meal prep. Made from budget and fridge-friendly ingredients, you’ll make this over and over! If you're not a salad love, like me, let me change your salad-hating mind with this easy, wholesome, and hearty kale salad.
1 cup of cooked farro (or quinoa, if you are gluten free like me)
6 cups of kale salad
1 cup cherry tomatoes, halves
1 can kidney beans, drained and rinsed
3 Tbsp., pine nuts
1/4 cup olive oil
1 lemon, juiced
1 tsp. honey
Pinch of salt
Combine salad ingredients in a bowl
Toss salad with dressing. This can be stored in the fridge for 3 days.
