About the Recipe
Ingredients
1/2 cup quinoa
1/4 cup zucchini, chopped
1/4 cup cilantro, chopped
1/4 cup cup black beans
1/2 jalapeno, diced
2 tbsp fresh corn
4 cups your fave leafy green ( I love kale, spinach, and arugula mixed!)
1/4 cup salsa
2 Tbsp. guacamole
Preparation
Step 1
Add all ingredients to a bowl, except for the salsa and guacamole, toss to combine
Step 2
Top with salsa and guacamole, enjoy!
