Organic Blueberry Muffins

Serves:

approx. 6 muffins- 1 per serving

Ingredients

  • ¼ cup almond meal

  • ¼ cup vanilla protein

  • 1 Tbs ground flaxseed

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • ⅛ tsp sea salt

  • ¼ cup egg whites

  • 1 banana, mashed

  • ¼ cup plain almond or G

    reek yogurt

  • 2 Tbs coconut oil

  • ½ cup blueberries

Preparation

1. Preheat oven to 350 degrees.

2. Mix together dry ingredients. In a separate bowl, mash banana and add in remaining wet ingredients.

3. Combine wet mixture into dry and stir until fully incorporated. Fold in blueberries.

4. Spray muffin tin with non-stick cooking spray. Pour in batter.

5. Bake for 20-25 minutes or until a toothpick comes out clean.
