Egg Muffins

Ingredients

6 large eggs

4 large egg whites

1 tsp. olive oil

3/4 cup diced red & green peppers

1 cup spinach, chopped

3/4 cherry tomatoes

1/4 tsp. pepper, basil, salt, oregano (separate)

Pinch of ground pepper

1/4 cup feta cheese

Optional toppings: avocado, salsa

Preparation

  1. Preheat oven to 350 degrees

  2. In a pan over medium heat, add olive oil. Add veggies and spices. Saute for about 8 minutes.

  3. Spray muffin tin with coconut spray.

  4. Combine eggs and egg whites in a bowl & whisk together.

  5. Scoop the veggies mixture into the muffin tin so that veggies are spread evenly.

  6. Bake for 20 minutes. Store in fridge up to 4 days.
