Blondie Mini Muffins


Makes 10 servings (2 muffins per serving)


  • 1-15 oz. can chickpeas,

    drained and rinsed

  • 1/2 cup unsweetened

    almond butter

  • 1/4 cup maple syrup

  • 2 tsp vanilla

  • 1/2 tsp salt

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda


1. Preheat the oven to 350. Spray a muffin tin

with coconut oil spray.

2. Combine all ingredients in a food procesor.

If you don't have a food processor, you can use

a blender!

3. Pour batter into the muffin tins and bake

for 18-20 minutes or until a toothpick comes

out clean.
