1 head of iceberg lettuce or green cabbage, shredded (chop as finely as possible)
1/2 cup cucumber, finely chopped
1/4 cup green onion or scallions
Spice it up with a jalepeno
1 cup basil leaves
1 cup spinach leaves
2 cloves garlic
1 small shallot
juice 2 lemons
1/4 cup olive oil
1/4 cup walnuts, cashews, or both
1 tsp. salt
2 tsp. rice vinegar
a sprinkle of chives
Mix the shredded lettuce, diced cucumber and chopped scallions into a bowl.
Add the ingredients into a the processor or blender and mix until smooth. Add water if preferred smoother.
Mix well until the salad base is coated in the dressing.
