Zucchini + Caramelized Onion Egg Muffins

Serves:

6 muffins (serving size 3 muffins)

Ingredients

  • 1 tsp. olive oil

  • 1 zucchini, diced

  • 1/2 cup yellow onion, diced

  • Pinch of salt

  • Dash of garlic powder

  • 6 eggs

  • 3 egg whites (or 1/3 cup liquid egg beaters)

  • Coconut oil spray

Preparation

  1. Preheat oven 350 degrees.

  2. In a small pan over medium heat, add olive oil, sautee zucchini and onion for about 8 minutes. Season with salt and garlic powder. 

  3. Spray muffins tins with coconut oil spray.

  4. Combine eggs and egg whites in a bowl and whisk together.

  5. Scoop the veggies mixture into the muffins tins so that the veggies re spread evenly. Pour egg mixture over veggies in muffin tins. 

  6. Bake 20-25 minutes

  7. Store in a meal prep container after the muffins have cooled. These are good for up to 4 days!
