Vanilla Mini Muffins

Ingredients

  • 4 scoops of vanilla protein poweder

  • 3/4 cup egg whites

  • 1/2 cup unsweetened almond milk

  • 1/4 cup organic coconut cream

  • 1/4 tsp. baking soda

  • Dash vanilla extract

  • Unsweetened coconut flakes

  • Coconut oil spray

Preparation

  1.  Preheat oven to 350 degrees.

  2. Whisk protein, egg whites, almomd milk, and coconut cream together in a bowl

  3. Add baking soda and vanilla

  4. Spray mini muffin pan with coconut oil

  5. Put mixture in pan. Top with unsweetened coconut flakes

  6. Bake for 10-12 minutes or until golden brown
