Ingredients
3 egg whites (or ½ cup liquid egg whites)
1 Tbs skim milk (or
unsweetened almond
milk)
1 roma tomato, diced
1 Tbs fresh basil, chopped
1 Tbs chives
Preparation
1. Spray a small skillet with fat free cooking spray.
2. Mix eggs and skim milk together in a bowl.
3. Pour into skillet over veggies.
4. Season with black pepper to taste.
5. Stir contents of skillet with spatula, folding
until eggs are thoroughly cooked.
6. Remove from heat and enjoy with a piece
of fruit!
